After a lot of random recipe reading and mental "healthy substituting" over the last year, I somehow just managed to wing this one in the kitchen last night. Luckily, it all worked out just fine, tee hee (I wouldn't bother posting if it had turned into a disaster, just so you know :P). Anywho, the recipe is completely "clean" as the health buffs like to put it, meaning that there are no processed sugars or chemicals added to this recipe. I think the most processed this in the recipe is the protein powder I used, but even that can be replaced if you don't have any. So have fun, make pie!
Who cares about lemons when you have awesome fruit like pears in the fridge! I don't want lemonade, I want PIE!!! Hahaha, but really though, I love me some desserts and it's so hard to find ones out in the world that aren't going to kill my healthy eating style. Super sad face about that...so the solution: make it myself, I guess?

YAY! I finally got my computer looked at! Aaaand...it turns out it was my internet being wired wrong and not my laptop that was messing my life up (>_>). Anywho, the point is that me and my posts are back in action! Although, I've realized that posting everyday is not something that can last...SO I'm switching to posting once every other day or so---less stress for me, less reading for you folks out there. (^_^) Anywho, while my lil laptop was out of commission, the weather here in Hawaii has started transitioning from winter rainy season to sunny skies!! LOVE the weather shift because I dislike cold, windy, rainy days, and also because I love frozen goodies like the one in the picture: Banana Split Protein FroYo Popsicles! I love the strawverry, banana, and chocolate flavors all swirling around together, YUUUUM!!! XD Original version of the flax waffle A few days ago, I wrote a post about the benefits of flax and put up a recipe for a Blueberry Flax Microwave Muffin, which by the way I still think is super delicious. ^_^ Today, I give you more breakfast food made with flax! Why not start the day off right, right? Tee hee. These amazeballs waffles come out just the way I like them, nice and crispy on the outside and soft on the inside (nom nom nom nom nom). Upsides of using flaxmeal instead of flour means that the waffle is actually low carb and packed of omega-3s! AND not only low in carb and high in protein (because of the protein powder), but if you have a carb-free (and therefore, sugar free) protein powder and liquid stevia like me, then it's completely sugar free as well!! Although, even if you don't have a carbless protein powder or liquid stevia, this waffle is still really low in sugar, so all is not lost. Anywho, the original version of the recipe (as pictured to the right) was just a cinnamon waffle. Tasted great, but then I started wanting something more desserty for breakfast and so the chocolate version was born! Try them both out and see what you think! Love digging in when breakfast is dessert I'm always on the look out for a protein filled breakfast to start my day off right. I recently tried out a coconut protein cake recipe I saw on Instagram from @angelamccaferty. If you decide to try it out, it kind of like coconutty pound cake-ish, just saying. Anywho, it's been a while since I had a loaf of any kind of bread that I haven't been cautious eating (normally too many carbs in exchange for not nearly enough fiber or protein or anything else), so when I found this recipe for protein bread and it didn't turn out too bad, I was all about trying to figure out what else I could do with it. Bread pudding was one of the first things I came up with (right after my initial idea and execution of slathering a slice with white chocolate wonderful peanut butter, hahaha). Anywho, I was never really a huge fan of bread pudding as a dessert, but I always thought it would make a great breakfast, tee hee. AAAAAAND that's what happened: bread pudding for breakfast. I just sort of slapped together a recipe on the fly one night (I let my bread cubes soak overnight), and was really happy with the results the next morning. Another Instagram inspired carrot cake-esque recipe! This one comes from @fitmencook, and makes for a tasty dessert-like breakfast. Even though I'd feel bad eating real carrot cake, this is a totally different story, tee hee. Who said you can't have cake for breakfast? lol We both used sugar-free pancake syrup, but....he used real eggs, and I didn't. He used amaranth flour, and I used whole wheat pastry. He topped his waffles with raspberries, and I made a "cream cheese" frosting! I think my fake cream cheese frosting works better with the carrot cake-like waffles than the raspberries, just saying. AND my "frosting" is still healthy! I love me some desserts, but balancing desserts with my new healthier diet is a pretty ominous area, not gonna lie. Thankfully, then I think up something like protein fudgsicles. It's not summer yet, but that doesn't mean I don't want the occasional frozen treat, right? Totally simple snack that literally only took me only 5 minutes to throw together (...even if I had to wait hours for them to freeze solid, grr). I used a popsicle mold that I bought from Bed, Bath & Beyond for about $7, but you don't have to run out and find/buy them if you don't think you'll use it. Any old paper cup and some popsicles sticks will work just as well...but I gotta say I enjoy having real molds. ^_^ This time around, I made peppermint flavored fudgsicles by using peppermint stevia, but you can always mix it up however you like! I can't believe people bought these... "Ch-ch-ch-chia!" I don't know if you have or haven't heard of this chia seed health fad that's sweeping the nation, but it's definitely arrived. As indicated by the post title and the quoted famous commercial jingle, chia seeds are indeed related to the pretty well known chia pets that were sold popularly in the 80s/90s (pictured to the left). The seeds grow into this carpet-esque grass that the Chia Pet company used to grow into animal shapes, all you had to do was water and trim your decorative "plant." Anywho, now we're in the 21st century and health folk everywhere are touting the benefits of eating the tiny little seeds these Chia Pets were grown from. You can eat them whole or ground down, raw or sprouted, and in just about anything. They also turn sort of gelatinous when left in liquid...and hence recipes like this chia puddings or chia drinks were born, breeding healthy snacks everywhere! Can't think of the last time I had the real thing I love Instagram!! I pretty much post something up everything, whether it be food, or clothes, or whatever. BUT I love it most for all the food and recipe ideas I find there. For example, I found a recipe for a carrot cake protein shake from @priskaraveo that's perfect as a post-workout treat in a cup. I don't really eat much actual carrot cake----too much sugar in the cream cheese frosting...arg. I only tweaked the recipe a little. For example, had to go and buy carrot juice because I don't own a juicer. However, I hear that if you steam the hell out of a carrot that it'll be soft enough to blend...if you want to go that route...I was too lazy, haha. I also used fresh ginger because I think you get more of that kick that ginger gives, as well as the inherent detoxing properties. Maple Blueberry oats while catching the sun rise. This has been the most amazing find of my healthy new life!! Hands down, swear to god. It was one of the first few pins I actually tried out from Pinterest, and although I've tweaked the flavors and add-ins to my liking and created brand new ones for myself, that pin is what started it all. So why all this hype about some oatmeal? Well because it saves me time and energy in the mornings when I'm hungry and don't want to do a damn thing to feed myself...cooking is tiring sometimes! On the other hand, when it's 10pm on some random night at home and I'm awake and thinking about what I'm going to eat for breakfast the next day, it's way easier for me to muster up some energy and get some food together (I honestly think I'm an insomniac sometimes). They're pretty simple to make, already pre-portioned come breakfast time, and SO convenient. These little suckers are so easy to just grab out of the fridge and run out the door with a spoon in tow (This is where I point you to the picture on the right from when my boyfriend decided he wanted to take pictures of sunrise and I NEEDED to bring food or I was going to be a very cranky girl). Yes, I said from the fridge; it's a cold oatmeal. I had never had cold oatmeal before making these, but you get used to it, especially with all the different flavor choices...you'll see what I mean, just read on. I could barely wait to eat them! There's nothing like peanut butter and chocolate and banana all mixed together! It might be one of my all time favorite flavor mixes. XD I also happen to love desserts, and thus this cookie was born with a little pinspiration from this pin that links to the original recipe on Watching What I Eat. I made my own tweaks to the recipe, including cutting out the carob/chocolate chips and replacing it with cacao nibs. Cacao nibs are little bits of chocolate that are 100% cacao, meaning no sugar or milk have been cut in. They retain all the benefits that people talk about chocolate having, but it's less fattening because it hasn't been altered from it's original 100% cacao state. The original also called for added chopped nuts, but I left that out in favor of using crunchy peanut butter. I know nuts are a healthy source of good fats, but calories are calories sometimes, and my needed nutrients at the moment didn't include needing that much fat, healthy or otherwise. I've been eating too much avocado, tee hee. Sacrifices, sacrifices. I also used chocolate protein powder instead of the suggested vanilla because, come on, chocolate goes with peanut butter and banana WAY better than vanilla ever will, hahaha, but I'm biased. I'm a chocolate lover to the max. (^_~) I also doubled the amount of protein powder for the recipe so that it would be a more worthwhile snack. |
